An incredible app to match one of the best cook books of all time!

Ratio by Michael Ruhlman is one of the best cookbooks of all time, and now you can own the app. With a stylish and elegant interface, it breaks the ratio of mixtures in cooking down to its simplest form. Doughs, batters, custards, fat-based sauces, stocks & thickeners, meat-related ratios, and desert sauce ratios are all presented in an easy to use format for the beginning or expert cook alike. Using the basic ratios that are in cooking you can adapt them and make endless variations. Handy calculators, recipe saving, and the ability to email recipes, post to Facebook or tweet via twitter are all provided within the Ratio app. Easy to use, and totally recommended!

Some good things, but needs refining

First of all, I love making bread. The ratio method, especially using weights and metric measurements using a digital scale, has certainly helped me perfect my recipes. So, the basic philosophy appears sound. I agree too with the author that adding ingredients by weight requires less cleanup since you simply "zero" the scales and just add until the scales display the correct quantity. The calculator is about the only real value in having this app. Good for increasing any recipe. i did not like the fact that updating my version 1 to 1.0.1 wiped out my saved recipes. Hopefully that does not happen again with future versions. Also, I cannot understand why the ratio graphs use different colours for ingredients from recipe to recipe. If you are using purple for fat, then be consistent–dont use it for sugar some times and fat another. Flour was represented in yellow for all but one recipe. So, a few refinements to consider.

Great app. Needs update!

The app crashes while trying to adjust quantities when using app on iOS 4 with a 3GS. Hope it gets fixed soon! Great tool for anyone who spends time in a kitchen.

Some bugs

Its a great app. However it could use some improvement. The calc. for mayo just doesnt work. No one needs to know how many cups of egg yolks to use, and you cant change the unit. that being my only complaint, i am happy with it.

muffins

I used it for making muffins but the fat to flour ratio is way too high. I cut it by 1/3 and it was still far too much butter. I am in love with the idea of this app more than the reality.

Great App for Chefs

Im a Red Seal Chef and definitely attest that this is a perfect app for professional cooks and chefs. The book is a must have as well!!

Complete waste of money. Dont bother with this app.

Very little here here

Five dollars? You could fit the information this app contains on a double sided, letter sized sheet of paper with 12 point type. I like the concept and it has its uses. But for $5 Id like to see how these ratios adapt to different dietary requirements, or something a little more encyclopedic in its scope. For one thing, its extremely French classical in its viewpoint. Wish Id read the reviews prior to purchasing.

Awesome App

This is a very good and functional app. The app is not a waste of time. The instant calculations are fantastic and having the ratios from the book at my finger tips is awesome! I agree with a couple of the other suggestions, but Id really like to see on the notes is the ability to hit a return key and have the keyboard turn horizontal.

4.99 for this? Love Ruhlman...hate thus app. Save your money.

A good start but needs work

This is a good idea and would be very useful with a few additions. I would like to have a central place to keep notes, the ability to post my own ratios, and most of all the calculator should let you back calculate the amount of ingredients from entering a desired final product volume. I read elsewhere that a revision is ready, but that was weeks ago and here we are with all of these weaknesses uncorrected. Disappointing

Ok, but tons of potential.

Its an ok app as is, but it would be one of the most used apps on my phone if I could add my own recipes. The "my recipes" tab is currently useless. If I wanted to use the same recipe from Ruhlmans book over and over Id just write it down, not look it up. Now if I could save my own recipes and use this app to rapidly scale the proportions up and down, THAT would be a 5 star app. Please and thank you.

Great but crashing on iPhone 4

I got this app after reading the book and I LOVE it. Yes, you could just write the ratios down out of the book, but the app also has a calculator and some details and tips for the different ratios. If they can fix it so that it will stop crashing on my iPhone 4 itd be great!

Needs an upgrade

I love the app, but its incompatible with iPhone 4.0.

No iPad support

There was no reason iPad support had to be withdrawn.

Not working on my iPod Touch

Why is this not working on my Touch? It loads fine, but any time I try to change the measure (ounces to grams, or something similar) the app quits and takes me back home. Ive sent a note to the support email but no response so far today. Im bummed and I sincerely hope that there is a fix. I will happily post another review if and when I get this running properly.

current version broken

Since the update for iOS 4 this app has been broken. Changing more than one item (e.g. quantity and units) results in a crash. This makes it basically useless.

Good concept, Lazy implementation

The concept behind ratio is good. The implementation...no. An app that isnt backward compatible with previous OS versions or other platforms (iPad) is simply shoddy work, something youd expect from a novice building a free app, not a paid-for app that Michael Ruhlman is willing to attach his name to.

Almost awesome cooking app!!

Love the concept and the pie chart presentation of ingredient proportions. Totally suits my style of cooking, which is to take a recipe and improvise from it. This allows for that so easily: to subsitute one fat for another fat, etc. Unfortunately, Im used to measuring ingredients by standard American measuring cups, and seeing ".2 cups" of this to ".8 cups" of that isnt very useful. I know weighing ingredients, especially for baking, is better... but Im not quite there yet. In any case, Id say better to eliminate the "cups" unit option than to have decimal equivalents that dont translate quickly to standard fractional measuring cup sizes.

Needing some improvements. PLEASE!

This app has so much potential to be great. First off, tell me the number of eggs I need, not the measurement of egg. Second, I want to put in how many servings of something I want for an estimate of how much I should make. Third, please change the cups measurements so that it isnt in decimals. Change these and you are well on your way to a five star app. Until then, not worth the $4.99 because its just too difficult to use.
